Since starting the Keto diet, and giving up carbs the thing I miss the most is bread. I have never been much of a pasta or rice eater but a nice piece of toasted bread with some butter or jam, heck sign me up. I love the buns we use at Farm to Fork because they are on the sweeter side that compliments the Kobe Beef we use. I found this recipe from Diet Doctor they seem to have some pretty good keto stuff going on.
We have made a keto burger using this bun at the restaurant and some said there was no way it was keto, I wanted to post the recipe so you can try it for yourself. I have made this recipe 3 times and it does work really well if you are having a craving for a bun for your burger. Here is my only suggestion, use parchment paper when baking or a non stick surface, they will stick! Also I have tried it with the sesame seeds, and they do not stay on very well and it just increases your cost when making. So omit if you choose.
2 tbsp sesame seeds (optional)
5 tbsp ground psyllium husk powder
1¼ cups almond flour
2 tsp baking powder
1 tsp sea salt
2 tsp cider vinegar
1 cup boiling water
3 egg whites
( I used Kitchen Aid mixer whisk attachment, not the dough hook)
Preheat the oven to 350°F (175°C). Mix the dry ingredients in a large bowl.
Bring the water to a boil and add it, the vinegar and egg whites to the bowl, while beating with a hand mixer for about 30 seconds. Don't over mix the dough, the consistency should resemble Play-Doh.
Moisten hands and make 6 pieces of the dough. Place on a greased baking sheet.
Bake on lower rack in the oven for 50–60 minutes, depending on the size of your bread. They're done when you hear a hollow sound when tapping the bottom of the bun.
Serve with butter and toppings of your choice. ( I used olive oil after slicing them and put them on the grill and served them for our burger)
It isn’t our sweet sour dough bread but it is a pretty good substitute if you are having that bread craving.
